Za’atar, a blend of thyme, sesame seeds, and sumac, is often used to season meats, breads, and dips. Baharat, a warm and slightly sweet spice mix, enhances stews and grilled dishes. Other essential ingredients include pomegranate molasses for tangy depth, rose water for floral notes, and tahini for rich nuttiness.


2. Mezze: A Feast of Small Plates

Mezze, an array of small appetizers, is central to Middle Eastern dining. Dishes like hummus (creamy chickpea dip), baba ganoush (smoky eggplant dip), and tabbouleh (a refreshing parsley and bulgur salad) set the stage for larger meals. These dishes are often paired with warm, pillowy pita bread.


3. Hearty Main Dishes

Slow-cooked stews, grilled meats, and rice-based dishes define Middle Eastern cuisine. Mansaf, a Jordanian dish of lamb cooked in fermented yogurt and served over rice, is a national favorite. Kebabs, made from spiced ground or cubed meats, are grilled to perfection and served with flatbreads and salads. Shakshuka, a dish of poached eggs in a spiced tomato sauce, is a breakfast staple.


4. Decadent Sweets

Middle Eastern desserts balance sweetness with fragrant spices and nuts. Baklava, made of layers of flaky pastry filled with nuts and honey, is a classic. Kunafa, a crispy, cheese-filled dessert soaked in syrup, is another favorite. Many sweets incorporate pistachios, dates, and orange blossom water.


5. Aromatic Beverages

Middle Eastern cuisine is complemented by strong coffee flavored with cardamom, refreshing mint tea, and laban, a tangy yogurt drink.
