THE SECRETS TO PERFECT GRILLED VEGETABLES

Grilled vegetables bring out deep, smoky flavors and caramelized sweetness, making them a delicious and healthy addition to any meal. However, achieving perfectly grilled veggies requires a few key techniques. Here are the secrets to mastering the art of grilling vegetables.

1. Choose the Right Vegetables

Firm vegetables like bell peppers, zucchini, eggplant, asparagus, mushrooms, corn, and onions grill best. Root vegetables like carrots and potatoes should be parboiled first to ensure they cook evenly.


2. Cut Evenly for Consistency

Uniformly sized pieces help vegetables cook at the same rate. Slice zucchini and eggplant into thick rounds or lengthwise strips, and cut bell peppers into wide, flat pieces. Smaller items like cherry tomatoes and mushrooms should be skewered to prevent them from falling through the grates.


3. Preheat and Oil the Grill

A properly preheated grill (medium-high heat) ensures a nice char without overcooking. Brush the grates with oil to prevent sticking and achieve those beautiful grill marks.


4. Use the Right Seasoning

A simple seasoning of olive oil, salt, and pepper enhances natural flavors. For extra depth, add garlic, lemon juice, balsamic vinegar, or fresh herbs like thyme and rosemary. Marinating vegetables for 15–30 minutes before grilling can also enhance their taste.


5. Control the Heat

Place denser vegetables like carrots and potatoes over direct heat for a good sear, then move them to indirect heat to finish cooking. Softer vegetables like zucchini and asparagus cook quickly and should stay on direct heat for just a few minutes per side.


6. Don’t Overcrowd the Grill

Leaving space between vegetables allows for even cooking and proper charring. Overcrowding can cause steaming instead of grilling, leading to soggy vegetables.


7. Use a Grill Basket or Skewers

A grill basket is great for small or delicate vegetables like cherry tomatoes and mushrooms. Skewers keep small pieces together and make flipping easier.


8. Finish with a Flavor Boost

Drizzle grilled vegetables with fresh lemon juice, balsamic glaze, or a sprinkle of feta cheese for a burst of flavor.
